Remixed: Beachcomber’s Gold (Waikiki)

Beachcomber's Gold (Waikiki)

Beachcomber’s Gold appears in three separate incarnations in Remixed, this version being a complete departure from the previous with only the light rum and Angostura bitters in each.

Donn was a tinkerer, rarely willing to call a recipe his “final” version. And as a Gnomish artisan, he excelled, but he wasn’t without failure…

Beachcomber’s Gold (Waikiki)

  • 1oz light Puerto Rican Rum (Brugal White)
  • 1/2oz gold Jamaican Rum (Appleton V/X)
  • 3/4oz passion fruit juice
  • 1/3oz lime juice
  • 1/2oz honey mix
  • 2 dashes Angostora bitters

Blend with 6oz crushed ice and strain into a chilled cocktail glass.

The above version is a big mess of tart and stupid with no hint of the rum it contains. Determined that I’d followed the recipe to a T good enough for those big gold chains, I set out to modify it.

Notes:

  1. The foam that the passion fruit juice generates is awesome when blended, so I wouldn’t recommend shaking this one. If you put it in a tall glass (unlike in the photo), the head will stick to the sides of the glass for a long while.
  2. Straining is called for in the original, but if you blend it for a few more seconds, you can just ignore that step. You’ll have plenty of tiny ice shards that dissolve as you finish the drink.
  3. The rum really needs to be beefed up – at least so you can taste it.
  4. Using quality honey is paramount. Find several you like and try each in this and other honey drinks, and for Tiki’s sake, don’t buy that bee spit in the plastic bear.

Beachcomber’s Gold (modified)

  • 2oz gold Jamaican rum (Appleton V/X)
  • 1/2oz light Puerto Rican rum (Brugal white)
  • 1oz passion fruit juice
  • 3/4oz lime juice
  • 1 1/4oz honey mix
  • 2 dashes Angostura bitters
  • 8 drops absinthe

Spin it right round in a blender with 8oz of crushed ice for about 5 seconds and pour into a narrow glass.

To be honest, I am wicked lazy when it comes to clean up, so I shake pretty much all of my cocktails so I don’t have to clean a blender. Though I may start with crushed ice for some.

I learned on the Brandy Milk Punch: texture is never the same shaken. For fresh fruit season, my blender is frequently in use, so it has its own spot on the counter and a “rinse-thoroughly-every-use, wash-once-a-week” schedule. That means that right now, I’m pretty loyal with the blending business, though I might get lazy and shake when the fresh, blendable fruits get scarce and the blender goes back in the cupboard.

  3. JoeNo Gravatar says:

At home I’m usually too lazy to bring out the blender and have to clean it afterward, and at work I don’t care to have the peaceful atmosphere of the bar pierced by the screaming motor of a Waring commercial blender

These exotic cocktails are where a good stick blender comes in handy. Easy to clean up too.

  5. RowenNo Gravatar says:

Blend when specifically called for, but otherwise shake. If I’m doing a big batch, sometimes I even stir out of sheer necessity.

  6. TiareNo Gravatar says:

I do both, but with Tikidrinks i like the frothy texture you get from blending and its so well suited for the tall glasses or mugs they are often served in.

I never thought of using my emulsion blender, I may give that a try, thanks Craig.

  8. FAJNo Gravatar says:

I prefer to shake with crushed ice, in many situations, over blending. If I have people over or I am making meny drinks, I will break out the blender, but if it is just me sipping something on a hot day, I don’t want another appliance to clean!

  9. njexpatNo Gravatar says:

Hand blender worked like a champ and not nearly the cleanup!!

I shake or blend as called for UNLESS I’m making drinks for a brigade of guests, in which I will blenderate with half the ice called for (on a per person basis) and then top up w. the other half of the ice (again on a PPB).
